I love Blogging!
Hello again friends! I have been away from my blog for many days because Josiah is cutting three teeth at once and none of us are allowed to sleep until they're through. Poor little guy, he is so upset and clingy. Aside from the news of his teeth his other big news is that he started crawling! Look out! It is so crazy, he comes to get me when he wants me now. Before I continue I want to thank everyone for the ideas about playing with Emma, it was so wonderful. I really hadn't thought before about teaching a child to pretend. I guess I thought they would do it naturally, but now I see that she copies my pretending. It's cool because even though I did show her some without really thinking about it, now I can be more strategic in teaching her how to play. I put together a dress up bag for her with a bunch of jewlery and sunglasses from the salvation Army. She loves it. IN other news; due to much prayer and the reinstatement of the mini M&M reward, Emma is doing much better with the potty. I am thankful because with the lack of sleep we've been having potty issues become very large and frustrating.Here is something exciting- a new family has started coming to our church and they have five children. The newest one is two days old because she had him after church on Sunday. I am thankful that Emma can have some little church friends. I am right now organizing a meal schedual for her. Meals is my job at church and I love it. I am realizing that it is the perfect role for me. I love making scheduals and food! I am looking forward to Easter this year because my mom and Chuck are coming or an extra long weekend which means help and free babysitting along with just being with them which is also nice:) And we are having a couple we know over for Easter dinner who don't know the Lord so I hope that we can share Christ with them. I got one of those Easter egg kits that open with little symbols of the easter story to tell the story with. It should be good. The only concern I have is Easter dinner. Last year mom and I made a big meal and it was alot of work. I'm trying to figure out how to make it less stressful for all since we have church in the morning and guests coming. I would love to know how all of you experienced hostesses handle this situation.

Hi Liz...this is Lori Ruehle...it is very exciting that you have a blog. Jackie did a good job making it known :). I have a blog on Xanga, if you ever get a chance to "stop by". I wish I could offer you advice on your question about simplifying Easter dinner, but I always manage to get completely stressed out, even when I have the whole day to prepare...I guess the only suggestion I can make is to make as many dishes ahead of time as possible...other than that, I am clueless. Anyway, congratulations on your new blog.
I don't know what you are planning for your meat dish, but a spiral sliced ham is an easy choice. To start with, it's fully cooked, so you don't have to worry about it being "done"--only that it's warm enough to serve. It's a no-brainer to slice, too! For potatoes, you could consider trying one of the flavored potato mixes. They are very tasty, and mix up in about 10 minutes tops. For a vegetable, French cut green beans served cold with some zesty Italian dressing couldn't be easier.
These short cuts will give you more time with your guests. The special-ness is in the presentation. Use nice serving dishes and a pretty tablecloth, and light a couple of candles. I've always said it's not what you serve, but how you serve it that makes a meal special.

I would agree with Deb that a spiral sliced ham is a must. They seem a little pricey compared to other hams, but you can use every bit of it, with much less fat and salt. For potatoes, you could also make a scalloped potato casserole ahead of time and just put it in the oven when you get home from church. I made a swiss vegetable casserole that was really good one year. (Think green bean casserole with cauliflower and brocoli rather than green beans.) I can find the recipe if you want it. Same goes for rolls - yeast rolls can rise in the fridge, put on top of the oven while you are baking the potatoes and thrown in the oven while the potatoes and ham are resting.
The short version of all that is do as much as possible ahead of time. Casseroles are the easiest way I have found when cooking large meals. Also, I always have a veggie tray or something out when people are arriving just in case you need extra time getting the meal together.
Oh and set your table before you go to church. Don't worrry about perfect, just be comfortable and be Liz! Everyone will love you!
